The Insta-Pot, Insanely Good or Good Grief?
Why am I talking about the Insta-pot on my jewelry/luxury fashion boutique website? Well, because apparently there’s more to life than jewelry and luxury fashion. At the end of the day we all go home and do life. Here’s a little glimpse into mine.
I committed to cooking 3 days a week. I’ve set the bar pretty low for myself. I figure I’m busy and often don’t feel like cooking when I get home. I often get home and end up in shell shock from the day, so if I don’t cook right away sometimes it just doesn’t get done.
Enter the Insta-Pot. I wasn’t so sure about my choice to purchase this appliance last year. I got it home and found it lacked a lot of instruction and seemed like I was creating a bomb in my kitchen. I found directions online and figured out cooking chicken and……..that was it. It seemed to be just a fancy quicker crock-pot. I’ve never been super in love with the crock-pot, everything turned into a mush mess and all kinda tasted like it.
When I decided to start paying attention to what I eat, and committed to cooking at home resolution I of course turned to Pinterest for inspiration. I found this https://confessionsofafitfoodie.com/2018/12/31-days-healthy-instant-pot-recipes/
I spent the morning printing recipes all 31 that sounded like something our household of semi-picky eaters would put up with. Then I STARTED. Sometimes just starting is the hard part. It seems like in every task that I don’t know how to do, starting is the hardest part. Needless to say it went ok! I’ve made 5 of the 31 recipes so far. All were pretty good in my book but 3 were winners with everyone.
I think half the battle is having a pantry that’s prepared for cooking. Do I have the items I need to make this with? Uhhhhh…. kinda. Usually I “make it work.” I found that the insta-pot sensation is a real, sensation! I can sauté, and then cook directly in the same pot? I guess reading sauté on the front panel wasn’t enough explanation for my little mind to figure out.
Tuesday night I made the asian pork tenderloin recipe from the list above. I am not a fan of pork, but this was actually really wonderful. Following the recipe I made the sauce first, sauteed the pork which gave it a great crust and then locked down the insta-pot to cook the tenderloin fully through. It was cooked perfectly! If you know me cooking at all is a small miracle. The insta-pot also has a great sound feature. It plays a little song when it’s locked or unlocked letting you know that it’s cooking. These new insta-pots are smarter than the old pressure cookers. They actually have a feature built in to protect you from blowing it up. If meat is stuck to the bottom or burnt to the bottom it will lower the temp of the entire cook to prevent explosions. It sounds scary but it’s really not.
I’m not a food blogger. I’m not really a blogger period but I thought sharing a little of my food/life experience might encourage you. Christi (our store manager) seemed inspired to try out this fancy insta-pot thingy. Maybe you should too? Next week let’s talk make-up!
